My version of Brookside Chocolate Berries
Easy candy like treat that taste great if kept frozen. But if you have a cool area to store these sinfully good confection, just place them in a covered container for a quick treat or when your low blood level needs a boost. The dark chocolate is also a antioxidiant super hero.
1 cup of raisins
½ cup of cran-raisins, or any combination of dried berry fruit. I have used dried mango.
1 cup of dark chocolate chips
1 tbsp of oil
Place the dried fruit in the blender or food processor and chop until a paste ball forms.
If you are only going to make a few treats just placed the fruit paste in the refrigerator or freezer until needed. No liquid has been added so look on the dry fruit package to see how long the berries will last when the package is open.
Melt the chocolate in the microwave on half power for 20 second intervals, checking every 7 seconds to see if chocolate is melting. You want the chocolate to be honey consistency.
Using a ¼ teaspoon scoop the berry paste and with damp hands form the dried berries into balls. I think with the amount of berry balls I made was about 36. You can use ½ teaspoon but you will consume less treats, more sugar and carbs. Place the berries in the freezer for 1 hour. If you do not want to add the chocolate then you are done. You can keep them firm in the freezer which to me is the best, or you can keep them in the refrigerator. You can use a candy coating spoon or use the prongs on a plastic folk to prick the berries and dipped them in the chocolate and then place the berries on a wax paper. If you put them back in the freezer they will harden quicker. Take them out of the freezer and make sure the berries do not sweat. You can put them in a covered container and then place them in the refrigerator until they are set and net sweaty. That means you do not want condensationon the candy. Enjoy.
¼ teaspoon can serve 36 chocolate covered berries
Serving pieces of 4 will yield 9 servings or
