High Protein Loaded Antioxidant Energy Bars
High energy bar with whole grain, nuts and seeds combined with combination of chocolate, peanut butter and banana. This is great for a snack and a meal bar. I eat these bars in the morning with coffee and snacks, Yum.
2 cup Oatmeal Flour 2 cup Wheat Bran 1/2 cup Almond Meal 1/2 cup Pepita Seeds or Shelled Pumpkin Seeds 1/2 cup Flax Seed Meal 2 tbsp of unsweetened coco powder 1 tbsp baking powder 1/2 cup of Pecan 1/2 cup of Walnut 1/2 c Chia Seeds 1 cup Tender Flake Coconut 1 cup Shelled Pumpkin Seeds, 1/2 cup Flax Seed, 1/2 cup ) Chia Seed 1 cup, Tender Flake Unsweetened Coconut, 1/2 cup hulled Sunflower Seeds 2 tbsp hemp protein powder or (homemade protein powder) 1 scoop of banana or vanilla whey protein powder 4 tbsp of Splenda or similar sweetener (You will need to make two batches of the liquid) 2 Tablespoon, Brown Rice Syrup 2 tbsp Coconut Oil 3 large eggs 1/2 cup 100% natural Peanut Butter or any nut butter 1/2 cup of nutella or any chocolate hazelnut butter (optional) 1 cup Black coffee' 1 large banana mashed (optional) 1 Bar per serving Calories 182.2 Total Fat 10.5gr _Sodium 29.7mg Potassium 58.7mg Carbohydrate 17.1gr Fiber 3.5gr Protein 6gr But I believe its more. Cholesterol 17.2mg These are two types of bars one with Nutella spread on and the other plain with Quinoa added in the bars.

Dry ingredients
Place all the nuts and seed on a cookie sheet and place in a preheated 250 degree oven until toasted 5-10 minutes. After nuts are roasted set aside until cooled. Once cooled chop nuts in 1/2 c portions in a nut grinder, food processor. You want the nuts to be chopped until resembles like flour. If you have a old coffee grinder this will do a great job. Just make sure you only use the grinder for nuts and seeds. I have discovered the Ninja blender and it chops all the nuts and seeds into evenly semi-course flour.
Prepare two 9x12 cake pans with parchment paper spread with coconut oil or use spray cooling oil like Pam.

For this to work it will be in two batches. Each batch will make 18 bars. So you will need to make a 2 liquid syrup.
In a large measuring cup or small bowl add add the nut butters, brown rice syrup, eggs, coconut oil, coffee, and 1 mash banana (optional).
In a large bowel mix all the dry ingredients including the Chia seeds, baking powder, and 1/8 tsp of salt. Divide the nut mixture into two large bowls. Make two liquid batches and mix well to combine the ingredients together. Do not add the the chips. Each batch of the bars will have a little more than a half a cup of the chocolate chips and the peanut butter chips.
Add the 1st batch of the liquid to 1st batch of the nut mixture. Mix well, the batter will be very thick then add the chocolate/ peanut butter chips. Mix until well combined. Put dough in 9X12 baking pan, and press one of the dough in the already prepared cake pan and top with chocolate chips.
If you have two 9x12 cake pan then make the 2 batch. If you only have one baking pan do not mix the liquid or the chips into the dry mixture until the 1st batch of bars are done cooled and removed.
Place the bars in a 350 degree oven and bake for 15-20 minutes or until knife is insert in the middle of the pan and comes out clean. Take bars out of oven and cool for 10-15 minutes.
Last cut bars into 18 portions each batch. Store in a sealed container and place in the refrigerator.
Serving Size: Makes 36 bars

Use a sheet of parchment paper to evenly press dough in pan easily..
